Snickerdoodle Muffins

Ingredients
  

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tsp vanilla
  • 2 eggs

Method
 

  1. Preheat the oven to 350 deg, and line 12 muffin cups with paper liners.
  2. In a medium sized bowl, mix together 1 cup of the flour, the sugar, baking soda, cinnamon and salt.
  3. After they are well blended, add the vegetable oil, sour cream, milk, vanilla extract, and eggs. Stir until well combined, about 2 minutes.
  4. Add the last 1 cup of flour, and stir until the flour is well incorporated and the batter is smooth.
  5. Fill the 12 muffin cups, and sprinkle the tops with a little cinnamon sugar mixture, if desired.
  6. Bake at 350 deg for 15-20 minutes.
