Ingredients
  

Pork Carnitas Ingredients
  • 2-3 lbs. pork shoulder or pork butt needs to have some fat
  • 1 teaspoon dried oregano
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 onion roughly chopped
  • 1 teaspoon minced garlic
  • Juice of 1 orange
  • 2 tablespoons lime juice
  • 2 cups chicken broth
Toppings
  • Cilantro
  • Red onion
  • Lime juice

Method
 

  1. Place all pork carnitas ingredients in a slow cooker and cook on low for 8-10 hours.
  2. Move an oven rack up to about 4-5 inches below the broiler heating element.
  3. Prepare a rimmed baking sheet by lining it with foil and preheat the broiler.
  4. Shred the pork, using a fork if needed, and use tongs to remove the meat to the baking sheet.
  5. Spread the shredded pork into a single layer on the baking sheet. Taste the meat and add salt if needed.
  6. Broil about 4-5 inches from the heat for 4-5 minutes or until a crust forms. To make the meat even crisper, remove the tray from the oven, turn the meat over, and broil the second side for an additional 4-5 minutes.
  7. Serve with warmed tortillas, chopped red onion, and fresh cilantro leaves. Top with additional lime juice if desired.
