Chicken and Wild Rice Soup

Ingredients
  

  • 1 1/2 lbs. chicken
  • 1 cup wild rice
  • 7-8 slices of cooked bacon optional
  • 3 stalks of celery chopped
  • 1/2 cup chopped onion
  • 1 cup chopped carrot
  • 8 oz. sliced mushrooms optional
  • 2 teaspoons minced garlic
  • 1 teaspoon poultry seasoning
  • 2 cans chicken broth about 30 oz. total
  • 1 can cream of chicken soup
  • 1 cans cream of mushroom soup
  • 14 oz. can evaporated milk or milk

Method
 

  1. Hopefully you chopped the vegetables and cooked the bacon the night before, and chopped the bacon into small pieces.
  2. In the morning you can add the rice, chopped vegetables, garlic, cooked bacon, and canned soups to the slow cooker.
  3. Top with the boneless skinless chicken or your choice.
  4. Cook on low for 8 hours or more, whenever you get home from work is fine.
  5. Use two forks to shred the chicken, then stir in the evaporated milk or cream before serving.
  6. Top each bowl with freshly ground pepper and salt to taste.
