Chicken and Wild Rice Soup

Ingredients
  

  • 1 1/2 lbs. chicken
  • 1 cup wild rice
  • 7-8 slices of cooked bacon optional
  • 3 stalks of celery chopped
  • 1/2 cup chopped onion
  • 1 cup chopped carrot
  • 8 oz. sliced mushrooms optional
  • 2 teaspoons minced garlic
  • 1 teaspoon poultry seasoning
  • 2 cans chicken broth about 30 oz. total
  • 1 can cream of chicken soup
  • 1 cans cream of mushroom soup
  • 14 oz. can evaporated milk or milk

Instructions
 

  • Hopefully you chopped the vegetables and cooked the bacon the night before, and chopped the bacon into small pieces.
  • In the morning you can add the rice, chopped vegetables, garlic, cooked bacon, and canned soups to the slow cooker.
  • Top with the boneless skinless chicken or your choice.
  • Cook on low for 8 hours or more, whenever you get home from work is fine.
  • Use two forks to shred the chicken, then stir in the evaporated milk or cream before serving.
  • Top each bowl with freshly ground pepper and salt to taste.
