Italian Sausage Soup

Ingredients
  

  • 1 lb. Italian turkey sausage casings removed or Italian seasoned ground turkey
  • 1 medium onion chopped
  • 1-2 yellow squash cut into bite sized pieces
  • 1 can white beans northern or white navy beans
  • 1 can diced tomatoes
  • 2 cans chicken broth 15 oz. each
  • 2 teaspoons minced garlic
  • 2 cups fresh baby spinach
  • ½ cup shredded Romano or Parmesan cheese (not the stuff in the green bottle

Instructions
 

  • Brown the turkey sausage as you would ground beef, breaking it apart as it cooks.
  • Add onion and garlic and cook until softened.
  • Add tomatoes, squash, beans and broth and cook until squash softens, 20-25 minutes.
  • Stir in spinach just before serving, and cook until wilted.
  • Top each bowl with a generous pinch of shredded Romano or Parmesan cheese.
