Easy Snickerdoodles

Ingredients
  

  • 1/2 cup margarine or butter
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 egg lightly beaten
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar

To roll the cookies

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat the oven to 375 degrees.
  • Mix ¾ cups of the flour, the sugar, baking soda and cream of tartar in a medium sized bowl. Use either soft margarine, or melt the butter.
  • Add to the dry ingredients along with the vanilla and the beaten egg. Mix until well combined, either by hand or with an electric mixer.
  • Add the remaining ¾ cup of flour and continue mixing until the flour in completely incorporated into the dough.
  • You could chill the dough at this point which would make it easier to work with, but who has time for that? Not me. Form dough into 1 inch balls (maybe a little bigger) and roll in cinnamon sugar mixture. I can usually get 24 cookies from this recipe.
  • Bake on an ungreased cookie sheet for 10-11 minutes, or until just starting to brown around the edges.
