Mix ¾ cups of the flour, the sugar, baking soda and cream of tartar in a medium sized bowl. Use either soft margarine, or melt the butter.
Add to the dry ingredients along with the vanilla and the beaten egg. Mix until well combined, either by hand or with an electric mixer.
Add the remaining ¾ cup of flour and continue mixing until the flour in completely incorporated into the dough.
You could chill the dough at this point which would make it easier to work with, but who has time for that? Not me. Form dough into 1 inch balls (maybe a little bigger) and roll in cinnamon sugar mixture. I can usually get 24 cookies from this recipe.
Bake on an ungreased cookie sheet for 10-11 minutes, or until just starting to brown around the edges.
