
Chicken with Italian Breadcrumbs
Ingredients
- 1 cup Italian seasoned breadcrumbs
- 2 tablespoons olive oil
I'm a mother of 4 boys and a full time engineer. The recipes on this site are what we really eat for dinner every day. My kids have been eating "grown up" food since they were toddlers, and now range in age from 14 to 21 years old. I've been a runner for 35 years, and my husband has been running and biking for 33 years. Healthy eating has always been important to our family.
My dad, the good Norwegian that he is, does not care for Mexican food. The one exception is fajitas, which he has adapted to venison and shared with all his friends.
Let me be honest from the start: I use a bottled stir fry sauce. The vegetables can be cut up ahead of time and stored in a zip top bag in the fridge.
